Lupine tops introduced as new ingredient for culinary use

Koppert Cress has introduced a new addition to its product range: lupine tops. The product aims to meet the growing demand for convenience and quality in the salad pea category and is intended for use in both cold and hot dishes.

Product characteristics
Lupine tops are characterized by their firm texture and subtle bean-like flavor. The taste begins slightly sweet and finishes with a mild bitterness. When heated with oil, the product develops a nutty flavour, broadening its culinary applications. The tops are ready to use and, due to their length and structure, are easy to process in professional kitchens.

Culinary applications
The versatility of lupine tops makes them suitable for a wide range of dishes. They can be incorporated into salads, stir-fries, and warm preparations and pair well with ingredients such as white fish, seafood, pasta, and a variety of vegetables. Their texture provides a consistent visual and sensory element that may complement modern and creative cooking styles, including Nordic and plant-based cuisine.

Perspectives from professionals
Chefs working with lupine tops have noted their visual uniformity and usability in high-paced kitchen environments. The product is reported to offer consistency and efficiency, which can be valuable in professional culinary settings.

Product positioning
Lupine tops are presented not as a substitute for existing ingredients but as an addition to the culinary toolkit. Their flavour profile and texture are positioned to expand the options available to chefs rather than replace other leafy greens or salad peas.

Availability and storage
Lupine tops are currently available for the foodservice industry, bulk use, and convenience retail. They are packaged in 175-gram trays, with two trays per box. The product has a shelf life of seven days under refrigeration at temperatures between 2–7°C.
